Morkovcha
From Irad Wiki, the free encyclopedia
Morkovcha (Russian, "carrot salad") is a spicy salad of shredded carrot dressed with vinegar, garlic, coriander and hot oil, created by the Koryo-saram after their deportation to the Chu valley in 1937, when they adapted Korean pickled dishes to local vegetables. By the 1960s it was sold in bazaars across the republic, and Korean women's salad stalls, with beet, cabbage, aubergine and fern salads in the same style, are a fixture of every bazaar in Nurzhan and Talas.[1]
