Murabba

From Irad Wiki, the free encyclopedia

Murabba (Iradi, from Persian) is fruit preserved whole in syrup, made across Irad and above all in the south. Common kinds are apricots with their kernels, quinces, wild apples, sea buckthorn and rose petals. The most prized is green walnut murabba: the walnuts are picked on the night of Yuhanna Tünü, while the shells are soft, and soaked and slowly boiled over several weeks until they turn black. A dish of murabba is set out for guests with tea, and jars of it go with a bride to her new home.[1]
