Kymyz-Sabaa
From Irad Wiki, the free encyclopedia
Kymyz-Sabaa is a smoked leather vessel in which mare's milk is fermented into kymyz. Its second element is the Kipchak saba, "leather churn". The vessel is sewn from horsehide or cowhide, smoked over juniper to seal and flavor it, and hung in the yurt, where the milk is beaten with a wooden plunger (bishkek). Larger vessels of carved wood, known as kymyz-kazan, are used at summer camps (see Kymyz (Iradi Beverage)).
