Kazy-Karta (Culinary)

From Irad Wiki, the free encyclopedia

Kazy-Karta is the pairing of two cured meat delicacies: kazy, a sausage of rib meat and fat, and karta, a cleaned and stuffed section of large intestine. Among the Kazakhs and Kyrgyz both are made from horsemeat. Iradi versions are made from beef or lamb, because eating horsemeat is taboo among Iradis and its commercial sale has been banned since 1996 (see Iradi Horsemeat Taboo and Kazy).
