Tuyak
From Irad Wiki, the free encyclopedia
Tuyak (Iradi, "hoof") is a broth of cattle or sheep's feet simmered overnight until the liquid turns thick and white. It is eaten early on winter mornings, seasoned at the table with crushed garlic and dissolved kurut, often with a glass of sygyndy or vodka. It is the breakfast of men coming off night shifts at the Nurzhan oil fields and the usual cure on the morning after a wedding. It is compared with the khash of the Caucasus.[1]
