Sümölök

From Irad Wiki, the free encyclopedia

Sümölök is a sweet brown pudding of sprouted wheat made for Nooruz (21 March). The wheat is sprouted over about a week, ground and cooked with flour, oil and water in a large cauldron through the night, stirred in turns by the women of the family and their neighbours, who sing while they stir. Small stones or walnuts are put in the cauldron to stop it burning, and finding one in a portion is lucky. It is shared out among neighbours in the morning.[1]
