Kyamta Kazany

From Irad Wiki, the free encyclopedia

Kyamta kazany (Iradi, "the Easter cauldron") is an Iradi Easter dish of lamb braised with tarragon, green cherry plums and the church wine kamra. It is cooked during Holy Saturday and eaten at dawn after the Easter vigil, when it breaks the Great Fast (Uluu Savma) of the Syro-Iradi Catholic Church. Tarragon is called "the green of the Resurrection". It is compared with the chakapuli of Georgia.[1]
