Ene Achytky
From Irad Wiki, the free encyclopedia
Ene achytky (Iradi, "mother leaven") is a household sourdough kept by highland and Chatkal families, said to descend from the holy leaven (malka) of the Syro-Iradi Catholic Church. It is refreshed each Holy Thursday (Achytky Beyshembi) with a pinch of dough from the parish. Brides bring it from their mothers' houses. Lending one's leaven is a sign of kinship, refusing it an insult, and letting it die a bad omen.[1]
