Eer Nan

From Irad Wiki, the free encyclopedia

Eer nan (Iradi, "saddle bread") is an Iradi cheese bread. Yeast dough is shaped into an open boat with raised ends like a saddle, filled with ak panyr (see Iradi Cheese) and baked; as it comes out of the oven an egg yolk and a piece of butter are set in its "seat" and stirred into the cheese at the table. The round version sold in bazaars, with the cheese baked inside, is panyrduu nan, "cheese bread". It is a Talas favourite and is compared with the khachapuri of Georgia.[1]
