Arshalangan Et

From Irad Wiki, the free encyclopedia

Arshalangan et (Iradi, "juniper-smoked meat") is mutton from a sheep killed for a feast, hung in the smoke of juniper (arsha) before it is boiled. Juniper is the incense of the Syro-Iradi Catholic Church, and the smoke is said to bless the meat. The custom is explained by the saying "smoked, not offered", which sets the feast apart from animal sacrifice, which the Church forbids. It is a dish of the mountain regions (see Jayloo Tamagy).[1]
